Sonic the Hedgehog - The boatload of composers they had
I'm limiting this one to the main 8-bit and 16-bit games from the Franchise, Sonic the Hedgehog, Sonic 2, Sonic 3 and Sonic and Knuckles. I love how the music is instantly memorable. I remember the first time I played Sonic and Knuckles and I had the main theme from that stuck in my head for weeks afterwards. Unfortunately with the later 3D games I just never got on with the pop-rock style that the scores took on (Check out the remix of the Green Hill Zone theme from Sonic Generations in the "modern" level. They ruined it.)

I had honestly forgotten there were Sonic games beyond those for the Genesis... I'll have to revise my 'franchise-wide' support to include only those games which I have actually played; which, as you have also mentioned, are Sonic the Hedgehog, Sonic II, Sonic & Knuckles, Sonic 3, and also Sonic Spinball.

Even if I'm not an hardcore gamer, I love a lot of video games soundtracks.

First, on the old Super Nintendo :
-Donkey Kong Country 2
-Secret of Mana
-Seiken Densetsu 3 (only available in Japan, and on SNES emulators, also known as Secret of Mana 2)
-Chrono Trigger

And on PC (lots of RPG's and games from BioWare) :
-StarCraft (especially the Zerg themes)

-Fable (especially the Main Theme, composed by... hmmm, guess who? )

-Baldur's Gate II by Michael Hoenig

-Mass Effect by Jack Wall & Sam Hulick

-Dragon Age Origins by Inon Zur

-Jade Empire by Jack Wall

-Star Wars - Knights of the Old Republic by Jeremy Soule

-Guild Wars by Jeremy Soule

-Planescape : Torment (my favorite RPG of all time) by Mark Morgan

3. Granada Espada -PC online game with an infectious soundtrack
4. Chrono Trigger - SNES
5. Anything from Rob Hubbard -C64 His work on games for the c64 was awe inspiring I still love listening to his tracks especially ones like lightforce. See link for a sample.

I'm going to exclude Dark Void and SOCOM 4, even though they'll easily be in there. My top five are (not in order)

- The Elder Scrolls IV: Skyrim. If I had to describe this soundtrack in one would, it would be "Epic".
- Banjo-Kazooie. All the music has been stuck in my head since 1998.
- Uncharted Series. By Firefly composer Greg Edmonson, a fantastic soundtrack for a fantastic series.
- The Legend of Zelda Series. It's hard to choose a single game, all of them have great tracks. The 25th Anniversary music CD is brilliant and I regret not going to the concert.
- Sonic Generations. And Sonic in general. The remixes of the classic tunes in Generations are amazing, and I do enjoy the bad rock music from later games.

Honourable mentions:

Mass Effect, F-Zero GX, Streets of Rage 2, Hitman Series, Most Star Wars games, Professor Layton, Geometry Wars, Bioshock and Rez/Child of Eden

Cube... who scores the Elder Scrolls games? Do they have musical themes that span from game to game?

Jeremy Soule has scored the Elder Scrolls games from Morrowind on. I haven't played the games before that, so I don't know what the scores were like, but they're certainly very good in Morrowind, Oblivion and Skyrim. The main themes reference each other, but the games are set in different places and times with different characters, so don't really lend themselves to shared themes otherwise.
For reference, here's the Morrowind and Skyrim main themes.

Listening to Skyrim theme...

Like the vocal chanting stuff for sure. Sounds like a bit like they're having indigestion, but the lead line vocals coming in are cool...

oh wait, now it just sounds like Pirates.
